1. High temperature sterilization principle
High temperature sterilization mainly kills microorganisms by heating, which is currently a widely used method. Common high-temperature sterilization methods include pasteurization and ultra-high temperature sterilization. The difference between the two lies in the control of temperature and time.
Pasteurization: This method aims to kill bacteria and microorganisms in beverages by heating them to a certain temperature and holding them for a certain period of time. Pasteurization is suitable for beverages such as dairy products and fruit juices, and can effectively preserve the flavor and nutritional content of the beverage.
Ultra high temperature sterilization: Using high temperature for a short period of time, it can kill microorganisms in beverages in a very short time, usually within a few seconds. This technology enables beverages to maintain a sterile state for a long time without the addition of preservatives, and is widely used in the production of long-life beverages such as dairy products and fruit juices.
2. Principle of low-temperature sterilization
Low temperature sterilization is achieved by using methods such as ultraviolet (UV) irradiation or filtration to achieve sterilization effect. Ultraviolet sterilizers are commonly used for non high temperature sterilized beverages such as bottled water, fruit juice, and tea drinks. They destroy the DNA structure of microorganisms through high-energy radiation of ultraviolet light, thereby achieving the purpose of sterilization. UV sterilization equipment does not require high temperatures and can effectively preserve the taste and nutritional content of beverages, making it suitable for products that are not suitable for high temperature sterilization.
3. Chemical sterilization principle
Chemical sterilization usually uses oxidizing substances such as ozone and hydrogen peroxide to achieve the sterilization effect. Ozone is a strong oxidant that can quickly destroy the cell walls of microorganisms, killing most bacteria, viruses, molds, and other microorganisms.
