1、 Preliminary preparation

  1. Selecting and Cleaning Cornus officinalis
    • Select fresh, pest free, moldy and spoiled Cornus officinalis fruits. Remove impurities, fruit stems, and other foreign objects.

    • Gently rinse the Cornus officinalis with clean water to remove dust and dirt from the surface, then drain the water.

    • Start the oven in advance, set the initial temperature to 40 ℃ -50 ℃, preheat it, and let the internal temperature of the oven reach a relatively stable state to prepare for the subsequent drying process.


2、 Set oven parameters

  1. Temperature setting
    • Phase 1: Set the temperature between 50 ℃ -60 ℃ and maintain this temperature for about 2-3 hours. This stage is mainly to gradually adapt the Cornus officinalis to the drying environment, initially remove some moisture, and avoid excessive temperature that may cause the surface of the fruit to dry too quickly and affect the release of internal moisture.

    • Phase 2: Raise the temperature to 60 ℃ -70 ℃ and continue drying for 3-4 hours. At this stage, the internal moisture of Cornus officinalis continues to dissipate, accelerating the drying process.

    • Phase 3: Finally, adjust the temperature to around 50 ℃ and continue drying for 1-2 hours to consolidate and enhance the aroma of Cornus officinalis, making the drying degree more uniform while retaining its certain flavor and nutritional components.

  2. Ventilation settings
    • Ensure that the ventilation system of the oven is functioning properly and maintain good air circulation. This can promptly remove the moisture emitted by Cornus officinalis, improve drying efficiency, and prevent moisture from accumulating in the oven, which can affect the drying effect.


3、 Drying process operation

  1. Plate installation and placement
    • Spread the Cornus officinalis evenly on the baking tray or pallet of the oven, taking care not to overlap the fruits and keeping the thickness at around 1-2 centimeters to ensure that the hot air can penetrate thoroughly and heat the Cornus officinalis evenly.

  2. Timed flipping
